Seibold showed promise as a junior and represented Queensland Under-17s in 1991 and Under-19s in 1993. He then played for Wests Brisbane and represented Brisbane Capitals and Queensland Residents, both in 1996. He also had a stint in the off-season playing with St. Estรจve in France. The following season he played for Canberra and made his first grade debut with the Raiders against Canterbury in the first-round of 1998 season. After 14 NRL games with the Raiders he went back-and-forth to England and his homeland to have stints with London Broncos, Ipswich Jets, Hull Kingston Rovers, Toowoomba Clydesdales, and in 2006 he moved to Wales where he was assistant coach to John Dixon at Celtic Crusaders who were promoted to the Super League premiership. He also played for the club in 2006 and represented Germany in the Central European Development Tri-Nations tournament, which the Germans won.

After his Crusaders contract ended in 2009 Seibold became the head coach of South Wales Scorpions for one season, where he led the club to the play-offs in their first ever season of existence. He came back home to coach Mackay Cutters in the Queensland Cup in 2011-12. The following season he coached Melbourne Stormโ€™s NYC Holden Cup Under-21s side, as well as Queensland Under-16s in 2012, and Queensland Under-18s in 2013-15.

He then came to the Rabbitohs as an assistant coach, and after Michael Maguire's tenure came to an end at the end of 2017 season, Seibold was appointed head coach for the 2018 season. He took the Rabbitohs to the preliminary final after they missed out on the finals in their two previous seasons and he won the Dally M Coach of the Year award for his efforts.

During the off-season there was a swap of coaches, with the Rabbitohs securing Wayne Bennett as coach, and Seibold taking over Bennettโ€™s previous club, Brisbane Broncos. The Broncos started off their 2019 campaign poorly but recovered later in the year and qualified for the semi-finals. They suffered their worst ever loss in the clubโ€™s history and were handed the biggest loss in finals history with a 58-0 thrashing they received from Parramatta in the elimination final.

In 2020, they started well with two wins before the season was suspended owing to the outbreak of COVID-19. When the competition restarted on 28 May with a shorter schedule, it turned out to be their season from hell. In their next 18 games they won only one game and received the clubโ€™s first ever wooden spoon. They were also thumped 59-0 by the Sydney Roosters to overtake their previous record loss, and after their round 13 thumping they received from the Rabbitohs, Seibold and the Broncos parted ways, with Peter Gentle taking over as interim coach.

In November 2022, he signed a three-year deal to coach the Manly-Warringah Sea Eagles, taking them to the semi-finals in 2024.
